Located southeast of Bordeaux in rural Southwest France, the idyllic countryside of Gascony contains a treasure trove of riches for those looking to discover and indulge in some of Europe's most interesting gastronomic culture.
On their new series titled Cooking with Wine, SommTV embarks on a deep dive inside the cuisine of Gascony and its surrounding regions guided by acclaimed author and professional chef Kate Hill. Based out of her historic home Camont, an 18th century farmhouse and chef's paradise located along the banks of the Canal de Garonne, Kate carefully prepares a range of authentic regional dishes on camera using only locally sourced meat, produce, and of course wine. These intricate yet approachable dishes range from Magret de Canard Sauce au Vin, a steak-like dish made from the breast meat of Foie-gras ducks, to Civet de Sanglier prepared with wild boar and escargots and slow-cooked in a Medieval wine stew. Each of these dishes make spectacular use of fresh in-season local ingredients while paying careful homage to the history, culture, and wine of the region, and are sure to inspire chefs of all levels to expand their repertoire of French cuisine.
