2016 “Uni” - Stolpman Vineyards

Electric tangerine, ocean air, passion fruit juice. Tart kumquat, elderflower, crunchy nectarine. Gooseberry, guava nectar, and lemon-lime candy highlight an impossibly vibrant and fresh-fruited core playfully awash with sea spray and lively saline minerality. Hints of lemongrass, wildflowers, and orange oil gradually emerge to impart a lightly pungent floral overlay as candied ginger and celery salt provide a backbone of natural spice. An interesting leesy component almost reminiscent of a citrusy saison sits beneath the energetic fruit backed by soil tones of fine sandy earth. Juicy, soft, and texturally rich on the palate while simultaneously crisp and alive; exhibiting noticeable turbidity in the glass and beautifully understated funk. Mouth-filling yet light in body; dry despite a lingering perception of sweetness that is supported by remarkably bright acidity. This 2016 "Uni" by Stolpman Vineyards is an incredibly delicious gastronomic white from Santa Barbara's Ballard Canyon.

While practicing of the art of food and wine pairing it is often said: "What grows together, goes together." This bottling, crafted by Stolpman Vineyards using a blend of 67% Roussanne/33% Chardonnay sourced from Ballard Canyon and bottled unfiltered, proves this legendary Sommelier's proverb to be true once more. Designed specifically to pair with Uni which can be harvested nearby off of the coast of Santa Barbara, this wine somehow exactly matches sea urchin's unique vibrancy and creamy freshness. It playfully presents a bevy of citrus and exotic fruit combated by a clean streak of salinity, managing to nearly-perfectly complement the nuances of this elusive delicacy. Be sure to grab a bottle of this incredible wine as you watch the premier of "The Delicacy" streaming now on SOMM TV.
