Lime pith, crushed rocks, tart white peach. Grapefruit flesh, wet grass, crunchy green pear. Orchard blossom and spring jasmine, fresh mint and almond skin. Sour green apple and lemon peel lead a tart-fruited and juicy attack that pulses with lively effervescence and cuts like a knife though a surprisingly broad and textured mouthfeel. Softly perfumed floral notes chime in to add delicate lift while mild grassy tones and a kiss of phenolics complement an interesting slightly bitter edge. Racy, energetic, and quite expressive and playful in nature; finishing with clean gravely minerality and subtle autolytic charm. Dry, medium in body, and quite high in acidity. While Champagne is France's uncontested king of sparkling wine production it is worth noting that bubbly is produced in many regions all over the country. This bottling, crafted by Rarecat Wines using 100% Sémillion sourced from the French region of Bordeaux, is an excellent example of a traditional method sparkler that is reminiscent of yet completely distinct from Champagne. This wine is first and foremost driven by tense and vivacious citrus-laden fruit and is fuller and more generous in the mouth than classic Champagne, but it still possesses the textbook acidity and focus that is typical of French sparkling. Sémillion's gorgeous varietal character shows through here in a beautiful way and clearly differentiates this from anything coming out of Reims or Epernay. This is a genuinely fun, unique, and enjoyable bottle of wine.
